“Slow food” is an international cultural movement, born in Italy in the 1980s, which promotes the meal as a moment of pleasure and which enhances the food and wine traditions of the whole world, against the junk food of fast food.
The concept of “Slow food” therefore represents a real lifestyle, linked to the pleasure of tasting the genuine products of the earth and the desire to enhance traditional cuisine and above all the Italian one.
The “Slow food” includes all the products of good Mediterranean cuisine and made in Italy, typical of the various Italian regions: from pasta in its infinite variations to buffalo mozzarella or Lucanian caciocavalli, from the most varied types of Italian wine to oil extra virgin olive oil, from the famous Florentine steak to local and particular products such as cantuccini from Prato or bigi di Carmignano.
It is our traditional peasant cuisine, poor, but genuine and healthy, at the base of the Mediterranean diet, whose main ingredients are:
- oil, raw on bruschetta or as a condiment for more sophisticated dishes;
- wine, the nectar of the gods, an integral part of our history and peasant culture;
- fruit, such as oranges or lemons, and vegetables, including artichokes, mushrooms, peppers, sun-dried tomatoes, aubergines, courgettes, asparagus, pickles and much more;
- pasta, at the base of our cuisine, with an incredible variety of shapes, fruit of the Italian imagination (spaghetti, linguine, tagliatelle, fettuccine, penne, tortiglioni, spaghetti alla chitarra, pici, orecchiette, fusilli, farfalle, lumaconi and many others ), mostly made with durum wheat flour;
- legumes, such as broad beans, beans, chickpeas, lentils, cicerchie.
