Bean the meat of the poor
The bean is one of the most used ingredients of Italian cuisine and of Made in Italy. They are part of the Mediterranean cuisine which is mainly based on pasta, legumes as bean and vegetables. Starting from pizza, the simplest dish to get to more renowned fish dishes such as shrimp and beans. Like vegetables, they have always been one of the key foods of the Mediterranean diet. However, as well as being very tasty, they are also healthy and abundant in protein for our body.
In the world as well as in Italy there are many varieties. In Italy the most common is cannellino il borlotto but if we take that of Sarconi there are an infinite number of ecotypes such as: Cannellino, verdolino, ciuoto or regina, Fasuli risi or dwarf rod, the black Maruchedda, the black cannellino or red cannellino, the tobacconist, canary, red bean (or russu), the duce and many others.

The dried bean is a truly precious food for the health of our body. It is rich in substances that are beneficial for our body, such as fiber, vitamins and minerals, and it is also low in fat. Precisely by virtue of the numerous fibers contained in it, the dry one has a low glycemic index. It is also rich in vegetable proteins, containing almost twice as much as other foods, such as cereals. In fact it is also known to be a valid substitute for meat in vegan and vegetarian diets.
It is a really tasty and versatile food; it can be exploited in a thousand different ways and in a thousand recipes and combined with many other foods. It is perfect, both for making tasty soups and minestrone, and as a condiment for first courses.
