The TABACCHINO variety is an ecotype of dwarf bean with a round-ovoid seed and the typical tobacco color from which it takes its name.
Always cultivated, with a high fiber content and very digestible, in the kitchen it enhances its flavor in soups, alone or with vegetables.
We also recommend it together with the cooking broth and stale bread, all seasoned with extra virgin olive oil, according to an ancient and traditional Lucanian recipe: “pani npussu cu fasuli” (wet bread with beans).

RECIPES

 RICE WITH BEANS TABACCHINO SARCONI BEANS
Ingredients for 6 people:
1- 300 g of rice
2- 250 g of Tabacchini beans from Sarconi
3- 100 g of bacon
4- 50 g of butter
5- 70 g of grated Parmesan cheese
6- 100 g of potatoes
7- onion
8- celery
9- extra vergin olive oil
10- salt and pepper

PREPARATION

Cook the beans on a low heat together with the potatoes in salted water, two stalks of celery and an onion, until they are undone.
Pass the vegetables through a sieve and flavor them in a saucepan where you have melted the beaten bacon in two tablespoons of oil.
Boil the rice in abundant salted water, then drain it, place it on a hot serving dish, season with the butter and half the Parmesan.
Garnish with the bean purée and serve, passing the remaining Parmesan aside.

SAUSAGES WITH TABACCHINI BEANS OF SARCONI
Ingredients for 4 people:
1- 500 g of Sarconi tobacco beans
2- 500 g of sausage
3- 4 red Tropea onions
4- bay leaf, thyme
5- Red wine
6- parsley
7- garlic, salt and pepper

PREPARATION
Boil the beans in about a liter of water with two glasses of red wine and a clove of minced garlic, adding parsley, bay leaf and thyme in a bunch.
Bring to a boil, then add the onions cut into wedges and season with a pinch of salt and a pinch of pepper. Cook for about an hour over low heat, with the container covered, then add the sausage cut into pieces and cook for another 40 minutes.
At the end remove the bunch of herbs and check the density of the sauce (if it is too liquid, thicken it over high heat).
Serve everything hot in the cooking pan.
