In oil: the provisions for the winter of Italian peasant culture

Like most of the preserves, even the pickles arise from the need to make the most of all the fruits of the earth and not to waste precious summer foods, although you can also use ingredients from other seasons such as mushrooms or cabbage.

In the past, when agricultural techniques were much less advanced than today, frosts, hailstorms and sudden atmospheric phenomena often ruined entire crops, leaving farming families without food. The pickles were therefore the provisions for the winter, the stocks to be carefully stored to cope with the colder months.
