    La Pasta Le Tre Colline è prodotta solo con il grano coltivato sotto il sole dei nostri campi in Basilicata. Da 3 generazioni ci prendiamo cura del nostro grano: dalla preparazione del terreno, che facciamo riposare ciclicamente, alla semina, sino al raccolto. Il risultato di tanto lavoro è un grano duro, genuino ed equilibrato, per una pasta sana e digeribile, che porta in tavola tutto il sapore della nostra terra.
    Il nostro percorso di qualita’:
    1 – Curiamo direttamente ogni fase: dalla preparazione del nostro terreno, alla semina e raccolto: questo significa tracciabilità al 100%
    2 – Il terreno viene fatto riposare ciclicamente perché possa rigenerarsi naturalmente di sostanze minerali nutrienti
    3 – La maturazione del nostro grano è favorita da una temperatura ideale ed un persistente soleggiamento
    4 -Cultivar di grano di qualita’ quali il Maesta’ e Don Matteo
    5 – Processo di produzione con trafilatura al bronzo e lenta essiccazione
    6 – Attenzione all’ambiente grazie alla confezione riciclabile al 100%

    The Pasta Le Tre Colline is produced only with wheat grown under the sun of our fields in Basilicata.
    For three generations we have been taking care of our wheat: from the preparation of the soil, which we let it rest cyclically, to the sowing, until the harvest.
    The result of a lot of work is a durum wheat, genuine and balanced, for a healthy and digestible pasta, which brings all the flavor of our land to the table.

    It is an excellent table cheese with a pasty consistency, produced in full compliance with the ancient traditional Lucanian recipe
    which involves the use of carefully selected milk and curdled with kid rennet, as well as exclusively manual processing according
    to techniques handed down from father to son.
    What makes our Caciocavallo fresh different from other caciocavalli is linked to the climate, the processing techniques and
    the types of maturation, from which the characteristic shape and flavor derive.
    The term caciocavallo derives from the way in which the cheeses are seasoned which, tied two by two,
    tied around the neck at the point of the bottleneck with a rush rope, are placed astride special supports.

    No-Matured or fresh Caciocavallo is a stretched curd cheese made from raw cow’s milk from the best farms in the Agri Valley,
    with the addition of only salt and rennet.
    Contains no preservatives.

    La Munachedda Nera è uno degli ecotipi che compongono la famiglia dei fagioli biologici di Sarconi IGP,
    alcuni tra i legumi secchi più pregiati. Si tratta di fagioli biologici lucani simili alla Munachedda chiara, da cui si differenziano per il colore del seme che si presenta di forma tondo-ovoidale, con i colori bianco e nero uniti in forme irregolari con prevalenza ora dell’uno ora dell’altro.

    Munachedda chiara are organic beans from Sarconi, IGP quality and are sold in 500g packs.

    Munachedda chiara is one of the best ecotypes of organic Sarconi PGI beans.
    They are high quality beans produced in Val d’Agri, in Basilicata, incomparable to the classic over the counter beans.
    Munachedda chiara beans appear small, ovoid in shape and light brown in color with uneven light patches.
    The color can be more or less intense depending on the type of soil on which it is cultivated.
    Excellent with cavatellini(cavatlluzz) or other small pasta shapes, with rice or as a side dish to meats and vegetables.

    CIUOTO or REGINA BIO(ORGANIC) Beans of Sarconi PGI in packs of 500g.

    Ciuoto is the best known of our organic PGI Sarconi beans grown in Basilicata: it is the oldest and most common variety.
    It is a superior quality dwarf borlotto bean, white in color with purple veins.
    It is one of that variety of Sarconi beans that hardly need soaking as they have a very thin skin that tends to flake off during cooking.
    The taste of the CIUOTO or REGINA BIO bean is hardly comparable to the classic over the counter beans, truly extraordinary.
    When used in the kitchen it is a “QUEEN” food for its various uses and for the excellent qualities of taste, flavor and cooking.
    It is in fact an authentic and superior Borlotto, to be used for the most varied and tasty recipes.
    Ideal with pasta, legume soups and salads with Tropea onions.
    It is a legume of extreme quality, as it is the culinary and cultural heritage of the Basilicata region.

    VERDOLINO BIO(ORGANIC) Bean from Sarconi PGI quality in 500g packs.

    The green bean is one of the varieties of our organic Fagioli di Sarconi PGI grown in Val d’Agri, in Basilicata. It is a variety of Italian dwarf organic beans with a round-ovoid seed and an unmistakable light green color, more or less intense depending on the cultivation area.
    And it is precisely from their color that they get their name.
    The peculiar characteristic of greenish beans is that of having a very tender and thin skin and a particularly fine and delicate taste, which makes them suitable to accompany any type of dish.

    Organic Verdolino Bean is highly appreciated for its delicate taste and particularly tender skin.
    In the kitchen it is recommended with pasta or rice but it is also delicious in soups, alone or with the addition of meat, fish or vegetables.

    TABACCHINO BIO(ORGANIC) Bean from Sarconi PGI  quality in 500g packs.

    In the range of high quality legumes, organic Sarconi PGI beans stand out and among all the various ecotypes,
    Tabacchini beans are those with the highest content of vegetable fibers, which help digestion and regularization of the intestine.
    From the brownish color “tobacco” from which the name derives, it is a dwarf bean with a thicker skin that always tends to remain quite crunchy even after cooking.
    Ecotype of dwarf bean with a round-ovoid seed and a typical tobacco color, which has always been cultivated for its high fiber content and easy digestibility.
    Excellent with soups, with vegetables, in summer salads or paired with small pasta such as cavatelli.
    Furthermore, we recommend it together with the cooking broth and stale bread, all seasoned with extra virgin olive oil according to an ancient and traditional Lucanian recipe.

    TUVAGLIEDDA ROSSA (RED) BIO (ORGANIC)

    TUVAGLIEDDA ROSSA(RED)  BIO (ORGANIC) Beans from Sarconi IGP quality in 500g packs.

    In the Val D’Agri area, in the province of Potenza, Basilicata some of the finest legumes in Italy are grown: the Sarconi PGI beans.
    They are particular by virtue of their impalpable skin, which gives them superior organoleptic qualities and easy digestibility.
    In the basket of our typical legumes and in particular among the Sarconi IGP beans, there is the Tuvagliedda Rossa variety, certainly among the most valuable.
    It is an ecotype of a climbing plant bean, which appears ovoid and white in color with uneven deep red spots.
    Its very thin skin means that it cooks very quickly; with an extremely elegant taste, it is indicated in the preparation of any recipe, from the simplest to the most elaborate.
