Online sale of made in Italy food products of the Italian tradition. Typical products of each region and of the Mediterranean diet. Products ranging from pasta to buffalo mozzarella to Lucanian or Calabrian caciocavalli. In Tuscany, for example, the typical products are, in addition to wine and oil, the Florentine steak and the cantuccini from Prato or the bigi di Carmignano.
These products derive from the Italian peasant tradition, poor but genuine and healthy cuisine.
The fundamental ingredients of Italian cuisine and the Mediterranean diet are:
- oil or extra vergine olive oil, raw on bruschetta or as a condiment for more sophisticated dishes;
- wine, the nectar of the gods, an integral part of our history and peasant culture;
- fruits, such as oranges or lemons, and vegetables, including artichokes, mushrooms, peppers, dried tomatoes, aubergines, courgettes, asparagus, pickles and much more;
- pasta, at the base of our cuisine, with an incredible variety of shapes, fruit of the Italian imagination (spaghetti, linguine, tagliatelle, fettuccine, penne, tortiglioni, spaghetti alla chitarra, pici, orecchiette, fusilli, farfalle, lumaconi and many others) , rigorously made with durum wheat flour;
- legumes, such as broad beans, beans, chickpeas, lentils, cicerchie.
An encyclopedia would not be enough to list and describe all the foods of Italian cuisine and made in Italy!

The harvest usually begins in the second half of October and ends in the first week of December.
We crush the olives no later than 2 days after harvesting to ensure the freshness of the product and very low acidity.
Milling – pressing of the olives: Mechanical extraction in a continuous cycle at a trusted cooperative mill. -

La Pasta Le Tre Colline è prodotta solo con il grano coltivato sotto il sole dei nostri campi in Basilicata. Da 3 generazioni ci prendiamo cura del nostro grano: dalla preparazione del terreno, che facciamo riposare ciclicamente, alla semina, sino al raccolto. Il risultato di tanto lavoro è un grano duro, genuino ed equilibrato, per una pasta sana e digeribile, che porta in tavola tutto il sapore della nostra terra.
Il nostro percorso di qualita’:
1 – Curiamo direttamente ogni fase: dalla preparazione del nostro terreno, alla semina e raccolto: questo significa tracciabilità al 100%
2 – Il terreno viene fatto riposare ciclicamente perché possa rigenerarsi naturalmente di sostanze minerali nutrienti
3 – La maturazione del nostro grano è favorita da una temperatura ideale ed un persistente soleggiamento
