Spelt: ancient grain rich in fiber that helps keep blood sugar under control and benefits the heart, but not only.
Let’s discover the numerous benefits of spelled which is a very ancient and above all very healthy cereal. It is a very ancient cereal and is thought to date back to around 8000 years ago.
With the development of modern cultivation techniques its use has been supplanted by soft wheat and durum wheat but recently this cereal has spread again thanks to its exceptional nutritional properties and quality in general.
In Italy it is grown mainly between Emilia and Liguria (in Garfagnana), Tuscany, Umbria and Lazio.
It is a plant that also adapts to poor soils and is able to withstand low temperatures.
The spelt (farro) of Garfagnana has received the IGP certification.
Can be eaten in grains in soups or even in salads.
It can be used as a flour in the preparation of various types of baked goods, but also in the production of pasta.
It is found on the market both as hulled spelled and pearl spelled: the first still has the external cuticle, the second is devoid of it and therefore requires shorter cooking times.
Spelt properties

What about types of spelled?
Spelt is a generic ancient cereal that is grown in three different species:
- Small or monococcus spelled: the oldest species of spelled owes its name, monococcus, to the particular physical conformation: delicate and small ears that contain a single grain.
- Spelled emmer: it is considered the spelled for excellence and as the name suggests, its ears usually contain two grains.
In particular, this type of spelled has gone down in history for helping to feed the troops of the Roman Empire.
The dicocco is much more productive than the monococcus and represents the most widespread species in Italy. It is grown in Umbria, Marche, Abruzzo, Lazio and Tuscany, mainly in the Garfagnana. - Spelled spelled: it is the result of a cross between dicocco and Aegilops Squarrosa, a wild grass. Its ear contains two to three grains. It is not cultivated only for food purposes but also to obtain straw.
Replaced in the 20th century by wheat, more productive and easier to grow, today spelled is rediscovered for its nutritional and beneficial qualities, often finding it as a product for soups and salads but also as bread or as spelled pasta.
