Beer is obtained from the fermentation of malt mostly barley. Hops help to define the degree of bitterness, while the color depends on the type of malt and the roasting temperature and the drying time to which it is subjected.
Red craft beers range in color from dark amber to red, while dark beers are brown or black. They generally have a more intense and complex flavor, suitable for more full-bodied dishes based on meat, for example, but we must bear in mind that it is not so much the color that defines the flavor, but the type of fermentation (high, low, spontaneous).

Centuries ago malts were mainly dried over open flame.
Not being protected from smoke, the malt and consequently the first beers had a smoky character, then considered unpleasant.
In the era of the industrial revolution, a new technique was introduced
which involved the use of particular ovens called “Klin”, which used indirect heat.
The smoky character became less and less common until it almost completely disappeared from the brewing world,
when in the nineteenth century the ancient technique was completely replaced by the modern one.
The Fumé red craft beer proposes the taste of the past thanks to the use of dried malts over a beech wood flame.
