Chianti – wine known all over the world
Chianti derives from the homonymous geographical area in Tuscany: the Chianti league was established in Florence in the 13th century and the sign was a black rooster on a golden field, which later became the emblem of the Chianti Classico Wine Consortium, born in protection of wine produced in the historic area (the other association for the protection of Chianti is the Chianti Wine Consortium).
The Chianti Classico area mostly includes the area of Radda, Gaiole, Castellina and Greve. The other Chianti production sub-areas subsequently recognized include: Colli Aretini, Colli Fiorentini, Colline Pisane, Colli Senesi, Montalbano, Montespertoli and Rufina.
Chianti is produced from 70-100% Sangiovese grape (a very common Italian grape variety with black berry) and only minimally from complementary vines, such as Canaiolo Nero or other red or white grapes (Trebbiano or Malvasia).
Additional mentions are those of Riserva, if aged for at least two years with an alcohol content starting from 12.5%, and Superiore, if it respects even stricter production rules.
With a ruby color and a harmonious and savory flavor, it is suitable for savory first courses, aged cheeses and meat (roasts and game).
