Beans are the dish of poor pleaple.
Beans are one of the most used ingredients of Italian cuisine and Made in Italy.

There are many varieties of beans.
In Italy the most common are the cannellini and borlotti beans, while there are an infinite number of ecotypes of the renowned Sarconi beans: Cannellino, Verdolino, Ciuoto or Regina, Fasuli risi or Tondino nani, Maruchedda black, Cannellino black or Cannellino red, Tabacchino, Canary, Red bean (or russu), Duce and many others.
Beans indispensable  in the kitchen
Dried beans are a truly precious food for the health of our body.
They are rich in substances that are beneficial for our body, such as fiber, vitamins and minerals, and are also low in fat. Thanks to the numerous fibers contained in them, dry ones have a low glycemic index.
They are also rich in vegetable protein, containing almost twice as much as other foods such as cereals. In fact, they are also known to be a valid substitute for meat in vegan and vegetarian diets.
They are tasty and extremely versatile: they can be used in a thousand different recipes and combined with many other foods, to make soups and minestrone, as a condiment for typical first courses such as pasta and beans or rice and beans, or as a side dish in meat dishes or of fish.

The black chickpeas from the Lucanian hills are a native Lucanian variety, with a small black seed.
They are grown in the upper Val d’Agri in the Sarconi area.
It is a type of legume very common in Mediterranean cuisine and with very ancient origins.In fact, it dates back to the time of the Egyptians and the Greeks.
Chickpeas are mentioned, for example, in some points of Galen’s work “On the properties of food” (180 AD):
the doctor of Greek origin accurately described the properties of chickpeas, also attributing aphrodisiac benefits to them.
The ancient Romans also used them often, mostly after fried them.

Considered one of the best varieties both for production and organoleptic quality, fast cooking with very tender and non-existent skin after cooking.
It is a bean that is part of the culinary and cultural heritage of the Basilicata region.
Together with the Ciuoto it is the one most used by the farmers of the Val d’Agri and in general of the whole Lucania region.
