Sauces and condiments: an Italian tradition
The need to preserve food for as long as possible has arisen since ancient times, when the availability of food was conditioned by the seasons and the possibility of catching prey.

The trade in salted and smoked fish was already practiced in ancient Egypt and among the Phoenicians and was also known to the Greeks and Romans.
The home preparation of canned food is a widespread habit in Italy, especially in the south: it has its roots in rural tradition and relives, drawing on the wealth of knowledge handed down from generation to generation, a moment of happy rediscovery.
Behind this trend there is the belief of obtaining a healthier product, as well as the attempt to obtain economic savings.
Sauces and condiments are traditional products of the Mediterranean diet, coming from Italian artisanal farms, often family-run, according to methods handed down from father to son.

Sauces and condiments are for the most part based on vegetables, as in the case of tomato sauce, essential for many first courses of Mediterranean cuisine.
Another typical condiment of Italic dishes is garlic. One of the most famous is certainly the red garlic of Sulmona: in addition to fresh garlic, the creams of red garlic of Sulmona are famous, consisting of clods that can also be preserved in extra virgin olive oil.

The clods are located in the inner, central part of the plant and are characterized by a pearl white color at the base that
