What’s better than a soup to find warmth and comfort on cold winter evenings?

Steaming, fragrant, made with simple ingredients, such as vegetables and legumes, or rich and substantial, soups are the ideal dish to face the cold of winter.

It is a typically winter or autumn dish that, with a little imagination, can easily turn into a refreshing and nutritious summer food. Originally, this was a poor dish of Italian tradition; then it spread successfully to the rest of the world.

The soup can be dry or liquid based, composed only of vegetables and legumes or prepared with pasta or rice: there are many variations, from spelled soup to pasta and bean soup, from pasta and chickpeas to fish soup … However it remains one of the favorite dishes of Italians: simple, genuine and suitable for every type of food requirement.
