Ancient Senatore Cappelli wheat pasta
The Senatore Cappelli ancient grain pasta is one of the finest on the market.
The Senatore Cappelli wheat is growing only in Italy. It was the most widespread durum wheat in our country before being supplanted by more modern ones and was almost in danger of disappearing.
Today it has returned to be the most loved wheat for lovers of good pasta and the Italian tradition.
The regions where it is most cultivated are Puglia , Abruzzo and Basilicata, but it is a grain that also adapts well to the regions of Central Italy.
Senatore Cappelli durum wheat was born in Italy in the early 1900s and the author was the agronomist Bazareno Strampelli who selected it from ancient Italic grains before the advent of modern agriculture.
Strampelli dedicated this type of wheat to the Abruzzese marquis Raffaele Cappelli, senator of the Kingdom of Italy.
Who, in the last years of the nineteenth century, together with his brother Antonio, had started agricultural transformations in Puglia. Supported Strampelli in his business, making him available experimental fields, laboratories and other resources.
Cappelli durum wheat is still cultivated after almost a century, particularly in southern Italy (Basilicata, Puglia, Sardinia but also in the rest of Italy), for the production of superior quality pasta. But is also used for organic bread and pizza. such as the renowned Altamura or Matera bread.
The ancient Cappelli wheat and its qualities
The properties of the ancient Cappelli wheat are proved to be superior to those imported. Greater presence of antioxidants, anti-inflammatory properties and even in the ability to reduce cholesterol are some qualities.
It is also much more digestible.
If we examine the nutritional values of an Italian Senatore Cappelli wheat pasta, the lower protein content is evident, but also the lower sugar content.
Furthermore, compared to the canonical 100 grams, Cappelli wheat pasta will provide more vitamins and mineral salts than modern durum wheat, with the same calories (or even less).
It is not possible to produce a Senatore Cappelli pasta with industrial methods.
To work Senatore Cappelli and produce a pasta that keeps cooking, longer times and lower drying temperatures are required, which are the typical characteristics of artisanal processing.
Only by allowing the dough time to blend and the pasta time to dry can you obtain a high quality pasta.
For this reason, a pasta with ancient Senatore Cappelli wheat is synonymous of quality artisanal pasta.
