In fact, it dates back to the time of the Egyptians and the Greeks.
Chickpeas are mentioned, for example, in some points of Galen’s work “On the properties of food” (180 AD): the doctor of Greek origin accurately described the properties of chickpeas, also attributing aphrodisiac benefits to them.
The ancient Romans also used them often, mostly after fried them. Small dried chickpeas from Lucania are very tasty.
They need at least 12 hours of soaking and long cooking times.
Once boiled, they can be used to prepare soups, with an intense and aromatic flavor, typical of the Lucanian peasant tradition.
Chickpeas are a very energetic food and contain many essential substances for our body: vegetable proteins, fiber, vitamin C and some B vitamins, as well as minerals and polyunsaturated fatty acids.
The presence of saponins means that chickpeas boast therapeutic properties, also related to the control of cholesterol and triglyceride levels.
