The Osteria dei Mercanti of Carmignano, a small town in the Medici hills, follows the tradition that dates back to the time of the Medici and which is still practiced today in the production of the famous BIGI di Carmignano.

The typical products of the Osteria dei Mercanti are obtained as in the past from flours selected by Tuscan farmers and from cereals grown with native seeds, according to the wisdom that few farmers have handed down over time.
Perfect pairing with a good glass of Chianti wine, but also, for fans, with craft beer such as TODO BIRRA, obtained from products of the Tuscan land.

The bigio di Carmignano or the Medici hills(colline medicee) is a ravioli in the shape of a sombrero or cappellaccio,
a typical pasta of Tuscan cuisine in a circular shape with scallops at the closure.
The dough of the Bigio di Carmignano is made from ancient grain flour, eggs and water, while the filling is made with aromatic spices,
dried figs from Carmignano and selected lean pork meat of quality.
