Lucano: peasant world
Lucano or lucani are the products of the cuisine of Lucania, which have become world famous. In this land there are two proverbs that recite: «Grow the pig that will grease your face» «Cresci il porco che ti ungerà il muso», that is, whose meat you will taste, and «The sweet and spicy pepper are the farmer’s lunch» «II peperone dolce e quello piccante sono il pranzo del contadino».
Pork and pepper are therefore the two pillars of Lucanian cuisine.
That Lucana is a cuisine of poor people, characterized by good flavors obtained from humble products:
- Pezzenta is a typical salami which, as the name underlines, is made from poor meats. Pork waste meats are used (head, offal, nerves), flavored with garlic and chilli.
- Lucanica is the long and thin pork sausage, obtained from the fillet and thighs, which is shredded, salted, flavored with fennel seeds and then stuffed into the casing.
Cruschi peppers: a Lucanian primacy
The inhabitants of Basilicata also have the primacy of the consumption of peppers and chillies, which they even call with four different names: “frangisello”, “diavolicchiu”, “cerasella” and “pupon”.
Once they were eaten to fight malaria, but even today they are widely used to flavor numerous dishes.
Cruschi peppers are a specialty of this land. The
peppers, after being cleaned, are dried, then ground and used in the preparation of cured meats and preserves. To dry them well, the peppers are strung in long strings and hung on the outer walls of the houses, called inserts.
In some areas they are fried: this is why they are called cruschi.
