VERDOLINO BEAN PGI SARCONI BEANS pack of 500g

RECIPES

VERDOLINO BEANS OF SARCONI IN THE PAN (or “pignatta” beans)
Ingredients for 4 people:
1 400 g of green beans
2 2 sticks of celery
3 2 cloves of garlic
4 1 tablespoon of chopped parsley
5 1/2 kg of peeled tomatoes
6 1 tablespoon of oregano
7 1/2 glass of olive oil
8 salt and pepper

PREPARATION

After cooking the beans in salted water, drain them and set aside a cup of cooking water.
Put them in a pan with the oil, the whole garlic cloves and the peeled tomatoes.
Season with salt, pepper, sprinkle with oregano, add the sliced ​​celery and the preserved cooking water; then cook everything together in the “PIGNATTA”, until the liquid is absorbed.
Pour the beans onto a serving dish, sprinkle with chopped parsley and serve.

PATE ‘OF VERDOLINO BEANS OF SARCONI AND ZUCCHINI
Ingredients for 4 people:
a 200 g of boiled and drained Verdolini di Sarconi beans
b 3 steamed courgettes still al dente
c parsley
d even dried mint
e 2 cloves of garlic
f oil, vinegar, salt, pepper

PREPARATION
Pass the beans through a vegetable mill, add the garlic blended with the parsley, oil and vinegar, tasting from time to time to adjust the flavors to your taste.
Blend the boiled courgettes with a spoonful of mint and a clove of garlic; add oil and vinegar, proceeding as with beans.
