MURUSEDDU or PANZAREDDA is an ecotype of climbing bean with elongated white seed with a characteristic red-wine
mottled spot with beige background on the belly of the seed, from which it takes the name of “panzaredda”.
In the kitchen it can be used with excellent results for soups or for the classic pasta and beans.

RECIPE
SARCONI DRIED BEANS SALAD
Ingredients for 6 people:
- 500 g of Muruseddu beans
- a small stalk of celery
- a clove of garlic
- 40 g of parsley
- a bay leaf
- an onion
- a clove
- a leek and a carrot
- 9 tablespoons of extra vergin olive oil
- 2 tablespoons of white vinegar
- salt and pepper
PREPARATION:
Boil the beans in abundant salted water for 3 minutes.
Clean, wash and tie together in a bunch the celery, a few sprigs of parsley, carrot, bay leaf and clove of garlic.
Put the clove in the onion.
Then add everything to the beans and finish simmering.
Once the beans have been cooked, let them cool.
Separately in a cup, emulsify the oil with vinegar, salt and pepper.
Season the beans with this sauce and let them rest for 15 minutes before serving.
