The variety CANNELLINO NERO (BLACK) (BLACK TRUCHISCH NERO) is an ecotype of dwarf cannellino with a cylindrical-elongated and tapered seed of white color with black-violet spots, sometimes completely black, not uniform: very beautiful also to look at.
Plant that in the waxy state has long and light yellow pods.
The black pollination climbing cannellino has a round and black seed, with a delicate flavor and a very tender skin. In the kitchen it is recommended for a single dish with pasta or on its own as a side dish.

RECIPE
SIDE OF SARCONI BEANS
Ingredients for 4 people:
- Cannellino nero(Black) beans 800 g
- 6 salted anchovies
- 2 cloves of garlic
- 1 sprig of parsley
- 1 glass of white wine vinegar
- 4 tablespoons of olive oil
- Salt and pepper
PREPARATION
Place the Sarconi cannellino nero beans in a pan with plenty of salted water and cook for 45-50 minutes.
Desalt the anchovies, bone them and cut them into small pieces.
Peel and cut the garlic; clean the parsley, wash it and chop it.
Then put the oil in a saucepan over medium heat and fry the garlic.
When the garlic is golden, place the anchovies and unpack them over a very low heat, mashing them with a wooden spoon;
after which pour in the vinegar and continue to work the anchovies, until they are reduced to cream.
At this point add a pinch of salt and pepper (season with salt only if necessary because the anchovies are very salty!)
And remove from the heat.
Drain the beans, pour them into a serving pan and toss with the hot sauce; then let them rest for about 10 minutes and serve them at the table.
