The quality processing of the Chelucci pasta factory:

  1. We take care of every phase directly: from the choice of strictly Italian and Tuscan durum wheat raw materials.
  2. Bronze drawing to give it that essential roughness to flavor it better with both tomato sauces but also meat or fish ragu.
    It also allows it to maintain the organoleptic characteristics and the totally natural flavor of artisan pasta unaltered.
  3. Low temperature drying to preserve all the nutritional properties of ancient Italian cereals.
    The drying takes place on frames placed in wooden cells at low temperatures (30 ° -35 °),
    for more or less long periods depending on the shape and type of pasta.
    For some types of pasta it can take up to several days, up to a week.
