Has beed dried at low temperature, to fully preserve all the nutritional properties of the wheat.
Furthermore the pasta is bronze drawn to give it a rough and porous texture which improves its quality.
Its production is completely handcrafted following the Tuscan tradition from the selection of raw materials to packaging.
The Pici Stella are an original Pastificio Chelucci format, born from an idea of Giovanni Chelucci and made with a bronze die with a special design.
It is the traditional Tuscan picio with a star shape, which allows to reduce cooking times without altering the porosity and taste of the traditional product.

The quality processing of the Chelucci pasta factory:
- We take care of every phase directly: from the choice of strictly Italian and Tuscan durum wheat raw materials.
- Bronze drawing to give it that essential roughness to flavor it better with both tomato sauces but also meat or fish ragu.
It also allows it to maintain the organoleptic characteristics and the totally natural flavor of artisan pasta unaltered. - Low temperature drying to preserve all the nutritional properties of ancient Italian cereals.
The drying takes place on frames placed in wooden cells at low temperatures (30 ° -35 °),
for more or less long periods depending on the shape and type of pasta.
For some types of pasta it can take up to several days, up to a week. - The packaging of special formats such as that of Pici is made entirely by hand, to give that unique and inimitable aspect to the product.
