Cultivar: moraiolo, frantoio, olivastra, leccino, weeping, pendolino.
Farming and cultivation system: Tendentially open vessel breeding with 4 branches.
The harvest usually begins in the second half of October and ends in the first week of December.
We crush the olives no later than 2 days after harvesting to ensure the freshness of the product and very low acidity.
Milling – pressing of the olives: Mechanical extraction in a continuous cycle at a trusted cooperative mill.

 Characteristics:

The plots of land are highly suited to olive cultivation.
Farm participates in integrated agriculture, therefore, if not strictly necessary, we prefer not to carry out fungicidal treatments on the olive trees.
The farm collects the olives by hand with the help of pneumatic harvesters where the types of olive trees allow it.
Then they are transported, directly in the boxes in which they were collected in the field, to the nearby oil mill to be crushed promptly.
The result is a harmonious, fragrant oil full of pleasant bitter and spicy notes typical of “new” Extra virgin olive oil.

Gastronomic combinations:

Particularly suitable for cold seasoning of legumes, salads, grilled vegetables, carpaccio and grilled meat. Its use in the preparation of “fett’unta” is traditionally typical.
Necessary in summer to accompany rice and cold pasta, panzanella and pinzimonio.
