of ancient durum wheat “Senatore Cappelli” stone ground, selected by the Association of Ancient Grains in Tuscany.
The wheat is transformed into granulated and then processed into pasta by the Pastificio Chelucci with traditional systems
and drying at low temperature in static cells, to fully preserve all the nutritional properties of Senatore Cappelli wheat.
This specialty boasts extraordinary nutritional qualities: the wheat is not modified, therefore it does not contain GMO components,
and the gluten it contains is of high quality.
All this gives the product excellent nutritional properties and a high degree of digestibility.

The pasta is bronze drawn to give it a rough and porous texture that improves the quality, especially of Senatore Cappelli durum wheat.
Its production is completely artisanal following the Tuscan tradition from the phase of choosing the ancient wheat to packaging.

The drying takes place on frames placed in wooden cells at low temperatures (30 ° -35 °),
for more or less long periods depending on the shape and type of pasta. - The packaging of the special formats is made entirely by hand, to give that unique and inimitable aspect to the product.
The packaging is also taken care of to ensure that all its qualities and characteristics are preserved during transport.
