Selection of Italian lentils with a very tender skin. Grown in the upper Val d\u2019Agri in the Sarconi area, they are recommended for soups.
\nLentils are the oldest known legume: it seems, in fact, that the first crops in the area of \u200b\u200bsouth-western Asia date back to 7000 BC.
\nFrom there they spread throughout the Mediterranean basin and it is said that one of the most noble families of ancient Rome, the Lentuli, took their name from the Latin word \u201clens\u201d, which means lentil.
\nThey are a reservoir of proteins, but also of minerals and vitamins, such as phosphorus, iron and vitamin B. They are sold only dried and sometimes peeled, that is, without peel, and for this reason they are quicker to cook.
\nNormally, in fact, they must be cooked for a long time, for about two hours, but not all of them require soaking.
\nThe different types of lentils share the same shape, round and flat, but vary in size and flavor.
\nThey can be green, dark brown and red in color.
\nEach of these types has peculiar characteristics, which make it suitable for specific preparations.
